  • 350g orange sweet potato, peeled & finely diced
  • 3 large carrots, finely diced
  • 2 litres vegetable stock
  • 1-2 tsp finely chopped coriander leaves
  • Coconut cream (optional – for garnish)

How to Make Red Lentil & Vegetable Soup

1: Sauté the Aromatics

  • Heat olive oil in a large saucepan over low heat.
  • Add onion, celery, coriander stems, and ginger. Cook for 5 minutes, stirring occasionally.
