Frittata
  • 8 large eggs
  • Sea salt & freshly ground black pepper
  • 1 handful coriander leaves, finely chopped
  • Finely grated zest of 1 lemon
  • Juice of ¼ lemon
  • 200g raw prawns, shelled & deveined
  • 1 tbsp coconut oil
  • 1 tsp dried chili flakes (for garnish)
  • 1 handful rocket leaves (to serve)
Avocado Salsa
  • 2 ripe avocados, diced
  • 2 tomatoes, chopped
  • ¼ red onion, finely diced
  • 1 garlic clove, minced
  • 1 handful coriander leaves, roughly chopped
  • Juice of 2 limes
  • 1 tbsp extra-virgin olive oil

How to Make Mexican frittata

1: Prepare the Egg Mixture

  1. Preheat oven to 220°C.
  2. In a large bowl, whisk eggs with salt, pepper, coriander, lemon zest, and juice.
  3. Roughly chop the prawns and stir them into the mixture.

2: Cook the Frittata

  1. Heat coconut oil in a small ovenproof frying pan over medium heat.
  2. Pour in the egg mixture and gently stir for about a minute.
  3. Transfer to the oven and bake for 4-5 minutes, until the top turns golden and slightly puffed.

3: Prepare the Avocado Salsa

  1. While the frittata cooks, mix all salsa ingredients in a bowl.

4: Serve & Enjoy

  1. Once done, remove the frittata from the oven and slide it onto a serving board.
  2. Top with avocado salsa, chili flakes, and fresh rocket.

  • 3 ripe avocados (not bruised)
  • Juice of 1 large lime

  • 1 small red onion, finely chopped
  • 1 small garlic clove, minced
  • 1 teaspoon sambal oelek or finely chopped deseeded chili
  • Salt and pepper, to taste
Method:
  1. Prepare the tomato: Use a large knife to mash the tomato into a pulp on a board, then transfer it to a bowl.
  2. Scoop the avocados: Halve, remove the stones (save one), and scoop the flesh into the bowl with the tomato.
  3. Mix the flavors: Add the lime juice, coriander, onion, garlic, and chili to the bowl. Season with salt and pepper.
  4. Mash & blend: Use a whisk to roughly mash everything together, leaving some chunky bits for texture.
  5. Prevent browning: If not serving immediately, place an avocado stone in the guacamole, cover with cling film, and chill until needed.
