  • 3 ripe avocados (not bruised)
  • Juice of 1 large lime

  • 1 small red onion, finely chopped
  • 1 small garlic clove, minced
  • 1 teaspoon sambal oelek or finely chopped deseeded chili
  • Salt and pepper, to taste
Method:
  1. Prepare the tomato: Use a large knife to mash the tomato into a pulp on a board, then transfer it to a bowl.
  2. Scoop the avocados: Halve, remove the stones (save one), and scoop the flesh into the bowl with the tomato.
  3. Mix the flavors: Add the lime juice, coriander, onion, garlic, and chili to the bowl. Season with salt and pepper.
  4. Mash & blend: Use a whisk to roughly mash everything together, leaving some chunky bits for texture.
