Ingredients

  • 2 egg whites
  • 1 tbsp coconut oil, melted
  • ½ cup maple syrup
  • 1 tbsp grated orange zest
  • ½ tsp vanilla bean paste
  • ½ tsp sea salt
  • 200g desiccated coconut

How to Make Coconut Orange Macaroons

  1. Preheat oven to 160°C (140°C fan-forced).
  2. Line a baking tray with parchment paper and lightly grease with coconut oil.
  3. Whip the egg whites and maple syrup using an electric mixer for 5-7 minutes, until thick and pale.
  4. Gently fold in the orange zest, vanilla bean paste, sea salt, and desiccated coconut.
  5. Scoop heaped tablespoons of the mixture onto the prepared tray.
  6. Bake for 25-30 minutes, until lightly golden on top.
