A Simple & Nutritious Lemon Curd Pie Dessert

Ingredients

For the Base:

  • 2.5 cups desiccated coconut
  • ½ tsp vanilla bean powder or paste
  • ½ tsp cinnamon
  • 2–3 tbsp coconut oil
  • 1 egg
  • Pinch of salt
  • ½ tsp liquid stevia

For the Lemon Curd:

  • ¼ cup fresh lemon juice
  • 6 tbsp coconut oil
  • 3 eggs
  • Zest of 2 lemons
  • ½ tsp liquid stevia (adjust to taste)

How to Make It

1: Prepare the Base

  1. Preheat oven to 140°C (284°F).
  2. In a bowl, combine all base ingredients and mix with a fork until dough-like. (Add more coconut oil if the mixture feels dry.)
  3. Press the mixture into a 24cm pie pan, forming a 1cm high crust. Pack it down firmly.
  4. Bake until golden brown, then remove and let it cool.

2: Make the Lemon Curd

  1. In a small saucepan, whisk eggs and coconut oil over low heat. Stir continuously to prevent clumping.
  2. Add lemon juice, zest, and stevia, then continue stirring for 5–10 minutes until thickened.
  3. Strain the curd to remove zest, then return to the mixture and stir well.

3: Assemble & Serve

  • Pour the lemon curd into the crust and serve warm or chilled.
  • To turn this into a cheesecake, bake at 160°C (320°F) for 5–10 minutes until slightly golden.
