A Simple & Nutritious Lemon Curd Pie Dessert

Ingredients
For the Base:
- 2.5 cups desiccated coconut
- ½ tsp vanilla bean powder or paste
- ½ tsp cinnamon
- 2–3 tbsp coconut oil
- 1 egg
- Pinch of salt
- ½ tsp liquid stevia
For the Lemon Curd:
- ¼ cup fresh lemon juice
- 6 tbsp coconut oil
- 3 eggs
- Zest of 2 lemons
- ½ tsp liquid stevia (adjust to taste)
How to Make It
1: Prepare the Base
- Preheat oven to 140°C (284°F).
- In a bowl, combine all base ingredients and mix with a fork until dough-like. (Add more coconut oil if the mixture feels dry.)
- Press the mixture into a 24cm pie pan, forming a 1cm high crust. Pack it down firmly.
- Bake until golden brown, then remove and let it cool.
2: Make the Lemon Curd
- In a small saucepan, whisk eggs and coconut oil over low heat. Stir continuously to prevent clumping.
- Add lemon juice, zest, and stevia, then continue stirring for 5–10 minutes until thickened.
- Strain the curd to remove zest, then return to the mixture and stir well.
3: Assemble & Serve
- Pour the lemon curd into the crust and serve warm or chilled.
- To turn this into a cheesecake, bake at 160°C (320°F) for 5–10 minutes until slightly golden.
