Ingredients (Makes 1 x 22cm Pie)
For the Crust
- 1 cup raw walnuts, soaked for 15 minutes and rinsed
- ¾ cup raw pecans
- 4 dates, pitted
- 2½ tbsp raw coconut nectar or maple syrup
- ¼ tsp sea salt
For the Filling
- ¾ cup fresh lime juice
- 2 cups raw cashews
- ½ cup raw coconut nectar or maple syrup
- ⅓ cup coconut oil
- ¾ tsp vanilla extract
How to Make Raw Key Lime Pie
Prepare the Crust
- Place all crust ingredients into a food processor.
- Blend until the mixture forms a sticky dough.
- Press evenly into a 22cm pie pan and set aside.
Make the Creamy Filling
- Rinse and dry the food processor bowl.
- Add all filling ingredients and blend until smooth.
- Pour the creamy lime mixture over the crust.
Let It Set
- Place the pie in the freezer for at least 3 hours or overnight.
Serve & Enjoy
- Remove from the freezer 10 minutes before serving.
- Garnish with lime and lemon slices for a fresh, vibrant touch.
