Ingredients (Makes 1 x 22cm Pie)

For the Crust

  • 1 cup raw walnuts, soaked for 15 minutes and rinsed
  • ¾ cup raw pecans
  • 4 dates, pitted
  • 2½ tbsp raw coconut nectar or maple syrup
  • ¼ tsp sea salt

For the Filling

  • ¾ cup fresh lime juice
  • 2 cups raw cashews
  • ½ cup raw coconut nectar or maple syrup
  • ⅓ cup coconut oil
  • ¾ tsp vanilla extract

How to Make Raw Key Lime Pie

Prepare the Crust

  • Place all crust ingredients into a food processor.
  • Blend until the mixture forms a sticky dough.
  • Press evenly into a 22cm pie pan and set aside.

Make the Creamy Filling

  • Rinse and dry the food processor bowl.
  • Add all filling ingredients and blend until smooth.
  • Pour the creamy lime mixture over the crust.

Let It Set

  • Place the pie in the freezer for at least 3 hours or overnight.

Serve & Enjoy

  • Remove from the freezer 10 minutes before serving.
  • Garnish with lime and lemon slices for a fresh, vibrant touch.
