Greek Bean Soup (Fasolada)

This vegetarian soup is simple to make and perfect as the weather cools down. It’s great for freezer meals, large gatherings, or a cozy night in. To get the best texture and flavor, remember to soak the beans overnight before cooking.


Serves: 6–8

Ingredients:

  • 500g dried haricot beans, soaked overnight
  • 1 large brown onion, peeled and roughly chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 bulb fennel, diced
  • 1 can peeled tomatoes (or 3 ripe tomatoes, roughly chopped)
  • 2 tablespoons tomato paste
  • 5 tablespoons olive oil
  • 2 bay leaves
  • Handful of fresh parsley
  • 2 zucchini, diced
  • 2 handfuls of green beans, trimmed and sliced
  • Salt and pepper to taste

Instructions:

  1. Drain the soaked beans and place them in a large saucepan. Cover with cold water and bring to a boil, skimming off the froth with a slotted spoon.
  2. Add the onion, carrots, celery, fennel, tomatoes, tomato paste, olive oil, bay leaves, and parsley. Let the soup simmer for 1 hour.
  3. Stir in the zucchini and green beans, then continue cooking for another 30 minutes or until all the ingredients are tender.
  4. Season with salt and pepper to taste, serve warm, and enjoy!
