This no-bake snack bar is incredibly simple to make—no oven required! It’s perfect for a quick energy boost or a healthy treat when cravings hit. Plus, it looks amazing, making it great for entertaining. Store in the freezer for a grab-and-go snack anytime!


Ingredients

Base

  • 1 cup almonds
  • 1 cup cashews
  • ½ cup coconut flakes
  • 2 tbsp cacao powder
  • 2 tbsp maca powder
  • 2 tsp peanut butter
  • 1½ cups dates
  • ¼ cup almond milk
  • 2 tbsp raw buckwheat

Filling

  • 1 cup frozen raspberries
  • ½ cup chia seeds
  • 2 tbsp acai powder (optional)
  • 2 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 1 tbsp peanut butter
  • 1 tsp vanilla bean paste or powder

Topping

  • 1 tbsp raw buckwheat
  • 1 tbsp chopped pistachios
  • 1 tbsp desiccated coconut
  • 1 tbsp chopped pepitas

How to Make These No-Bake Snack Bars

  1. Line a 20cm x 30cm slice pan with baking paper, ensuring the edges extend over the sides.
  2. Blend all base ingredients in a food processor until fine and crumbly.
  3. Slowly add almond milk in small amounts, mixing until sticky. Fold in raw buckwheat.
  4. Press the mixture firmly into the lined pan. Place in the freezer to set.
  5. For the filling, blend all ingredients until smooth. Spread evenly over the base, using a spatula to smooth the surface.
  6. For the topping, mix all ingredients together and sprinkle over the filling.
  7. Return to the freezer for at least 2 hours before slicing into 18 bars.
  8. Serve frozen for the best texture and flavor.
