Here’s the Recipe for a Hearty Chicken and Vegetable Stew: Serves 4

Ingredients
  • 3 chicken thigh fillets, sliced into strips
  • 2 parsnips, diced
  • 200g celeriac, peeled and diced
  • 2 carrots, chopped
  • 2 tablespoons ghee
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons curry paste or curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground chili
  • Sea salt and ground black pepper, to taste
  • 300ml chicken stock
  • 200ml coconut cream
  • Fresh coriander, chopped (for garnish)
Method
  1. Heat the ghee in a pan over medium heat. Add the chicken and cook until browned. Transfer to the slow cooker.
  2. Sauté the onions, garlic, and ginger in the same pan for about 5 minutes, until soft and fragrant.
  3. Stir in the curry paste (or powder), turmeric, chili, salt, and pepper. Let the spices toast for a minute to release their full flavor.
  4. Pour in the chicken stock, bring to a gentle boil, and stir occasionally.
  5. Transfer everything to the slow cooker, then add the parsnip, celeriac, and carrots.
  6. Cover and cook on low heat for 6-8 hours until the chicken is tender and the vegetables are soft.
  7. In the final hour, add the coconut cream and stir gently.
  8. Just before serving, sprinkle with fresh coriander for a burst of freshness.
