Method making Chia and Zucchini Hazelnut Bread

For the Bread

  1. Preheat oven to 160°C (140°C fan-forced) and line a 22cm loaf tin.
  2. In a large bowl, combine all dry ingredients.
  3. In a separate bowl, lightly whisk eggs with a fork and mix in the wet ingredients.
  4. Combine both mixtures, stirring until you form a slightly wet dough.
  5. Pour the dough into the loaf tin, then sprinkle with extra pumpkin and sunflower seeds.
  6. Bake for 1 hour, or until golden brown. To test, insert a skewer—if it comes out clean, it’s done!

For the Cashew Nut Butter

  1. Place cashews in a food processor and blend until a dough-like consistency forms.
  2. Add melted coconut oil, salt, and 1 Tbsp of water. Process until it reaches your preferred smooth or crunchy texture.
  3. Store in an airtight container until needed.
