Spice-Crunchy Crusted Salmon Recipe (Serves 4)
Ingredients
- 1 tablespoon ground cumin
- 2 teaspoons ground turmeric
- 1 tablespoon grated fresh ginger
- 1 tablespoon finely chopped lemongrass
- 4 kaffir lime leaves, finely chopped (or 2 teaspoons grated lime zest)
- 1 tablespoon lime juice
- 2 tablespoons chopped fresh coriander leaves
- 4 fresh red chilies, seeded and finely chopped
- 2 teaspoons coconut oil
Method
- Mix all ingredients (except the salmon) in a bowl.
- Lightly oil a pan, then sear salmon on both sides until browned.
- Transfer to an oven tray and spread the spice mixture over one side.
- Bake at 200°C for 10 minutes, or until fully cooked.
- Serve hot with a side of vegetables or salad.
