Homeward bound from the airport after my Vietnam adventure stopped in at Springvale, the heart of Vietnam in Australia. Wow….have such an appreciation and understanding of the food here now and all the ingredients on tap! So authentic, I felt like I was in Vietnam again. I think I will be making regular trips to keep the holiday feeling alive.
A tip is to make the stock in advance and freeze it if pressed for time.

This is a simple and nourishing soup that you can enjoy any time of the day. I regularly make mine with skinless organic chicken thighs but this is the sort of soup you can swap and change to whatever ingredients you have on hand. I also love pouring in lightly beaten egg just at the very end before serving which makes wonderful egg noodles and adds another texture and flavour component that’s delicious.
