Beetroot is an amazing vegetable and has been used for centuries for medicinal purposes, primarily for disorders of the liver as they help to stimulate the liver’s detoxification processes. The plant pigment that gives beetroot its rich, purple-crimson colour is betacyanin; a powerful agent, thought to suppress the development of some types of cancer.

This is a great hummus recipe without the chickpeas. So very paleo friendly. It tastes delicious and is extremely nutrient dense. You can try this recipe using carrot for another wonderful spread.

Ingredients
- 1 inch slice large carrot
- 2 apples (Golden Delicious or Royal Gala are best)
- 1/2 stick celery
- 1 small whole raw beetroot
- 1/2 inch slice unwaxed lemon
- 1/2 slice ginger
Juice the lot. Enjoy!
