Great snack option when you are on the run or feel like a sweet treat.
1/2 cup dates, soaked in hot water
1/4 cup whole almonds or pecans
1 tablespoon lime juice
1 teaspoon lime zest
3 tablespoons shredded coconut
1. Process dates and almonds together in food processor or Thermomix until well chopped and combined.
2. Add lime and shredded coconut and pulse to combine.
3. Roll into balls and coat with desiccated coconut.
Store in fridge or freezer.
