Just love this guilt free and delicious dessert based on avocados. Make sure you allow enough time for set before eating.
- 2 avocados
- 1/3 cup coconut butter or coconut oil
- 1/3 cup coconut nectar or honey
- Juice of 2 limes
- Pinch celtic sea salt
- 1/4 teaspoon vanilla powder or essence
- 1 teaspoon lime zest plus 1/4 teaspoon for garnish
- Place all ingredients in food processor and blend until smooth and creamy
- Top with shredded coconut and remaining lime zest
- Refrigerate for minimum 2 hours before serving to allow to set.
