Healthy tweek on a muesli bar, packed with loads of great wholefoods. So easy to throw together.
Makes: 12 bars
Ingredients:
- 1/2 cup almonds
- 1/2 cup pistachios
- 1 cup pumpkin seeds
- 1/2 cup white quinoa
- 1 cup shredded coconut
- 1/2 cup sunflower seeds
- 1/4 cup chia seeds
- 20 fresh Medjool dates, pitted
- 6 Tbsp coconut oil, melted
- 4 Tbsp raw cacao powder
- 1 tsp vanilla extract
- 2 Tbsp raw honey
- 1/2 cup rolled oats
- 1/3 cup dried goji berries
- 2 Tbsp raw cacao nibs
Method:
- Add almonds, pistachios, pumpkin seeds, quinoa, shredded cocnut, sunflower seeds and chia seeds to food processor, high powered blender or thermomix. Pulse a couple of times until roughly chopped. Set aside in mixing bowl.
- Add dates, coconut oil, cacao powder, vanilla and honey to food processor. Blend until smooth consistency. Scrap down the sides and add a little extra cocnut oil or water if needed.
- Add date mixture to mixing bowl with other ingredients. Stir through rolled oats, goji berries and cacao nibs until well combined.
- Press mixture firmly into a lightly greased and lined 28cm x 18cm baking pan. Refrigerate for minimum of 30 minutes.
- Cut into thick bars and store in airtight container in fridge. Keeps for 1 week.
