My partner introduced me to this one. Such an easy recipe! No cooking.

Stores in freezer for when you need a nutritious snack or treat. Looks fantastic, so great to entertaining.

Makes 18 bars

Ingredients:

Base:

  • 1 cup almonds
  • 1 cup cashews
  • 1/2 cup coconut flakes
  • 2 Tbs cacao powder
  • 2 Tbs maca powder
  • 2 tsp peanut butter
  • 1.5 cups dates
  • 1/4 cup almond milk
  • 2 Tbs raw buckwheat

Filling:

  • 1 cup frozen raspberries
  • 1/2 cup chia seeds
  • 2 Tbs acai powder (optional)
  • 2 Tbs maple syrup
  • 2 Tbs melted coconut oil
  • 1 Tbs peanut butter
  • 1 tsp vanilla bean paste or powder

Topping:

  • 1 Tbs raw buckwheat
  • 1 Tbs chopped pistachios
  • 1 Tbs desiccated coconut
  • 1 Tbs chopped pepitas
Method:
  1. Line 20cm x 30cm slice pan with baking paper, extending paper over long sides
  2. Blend all base ingredients in food processor or Thermomix until fine & crumbly.
  3. Slowly add small amounts almond milk and mix until sticky.
  4. Fold in buckwheat until combined.
  5. Push down into pan firmly and set in freezer.
  6. For Filling – blend all ingredients in food processor until smooth. Spread over the base & smooth down with a spatula.
  7. For Topping – mix all ingredients together & sprinkle over the top. Put back in freezer for 2 hours.
  8. Serve frozen.
