Cashews are rich in iron, phosphorus, selenium, magnesium (for bone health and a healthy heart) and zinc. They are also good sources of protein, packed full of good fats and high in dietary fibre.
3 cups desiccated coconut
1 cup cashews
¼ cup honey
3 limes, juice and zest
pinch of sea salt
Blend all ingredients in a food processor until mix comes together. Roll into walnut size balls (approximately 30g). Store in refrigerator.
Makes approximately 24 bites.
